Ingredients

10 Dates

85g Raw Almonds

2tblsp Maple Syrup

1-2 tblsp fine desiccated Coconut Makes 12-14 balls

Soak the dates in boiling water for 10 minutes. While the dates are soaking add the almonds to a dry fry pan heat and toast the almonds for 5 minutes, shaking occasionally.

Drain the dates and allow the almonds to cool.

Add the dates to the food processor and whiz them up until they are well chopped and paste like. Then add the toasted almonds, Red Tractor Organic Cacao Powder, Red Tractor Organic Rolled Oats, Red Tractor Chia Seeds and the maple syrup. Whizz the until they nuts and almonds are broken down to large crumb size. The mixture should stick together well. If not add a teaspoon or 2 of cold water.

Put the desiccated coconut on a plate. Then take about 2 tsp of the mixture at a time and roll into balls and then roll the ball in the desiccated coconut, continue until all the mix is used up.

Store the balls in the fridge for a week – if they last that long!
